Wild Mother Tasmania demonstrates what can be achieved when local ingredients, minimal intervention techniques and time are combined with an unwavering focus on quality and flavour.

Situated in the heart of the renowned fruit producing Huon Valley region of Southern Tasmanian, we have direct access to very high quality, cool-climate fruits.

Our apple and cherry suppliers are within a few kilometres from us, which means we can source fresh fruit with very few food miles.

A PREMIUM CRAFT

We use this fruit to make simple unfiltered and unpasteurised living vinegars that retain the nutritional components and flavour of the original fruit.

We are using these vinegars as a base for developing delicious tonics that bring more super healthy ingredients into the mix. Our first release in this range is our Raspberry, White Tea and Organic Apple Cider Vinegar Shrub that makes an invigorating non-alcohol aperitif when mixed with soda, or a burst of raspberry intensity when added to cocktails.

Ageing our vinegars in bespoke oak casks allows our condiment vinegars to mellow and develop unique complexity. Something only time can provide. We are fascinated by the interplay between barrel, the liquid within and time
