This small run begins with our Huon Valley Apple Cider Vinegar and rests for more than four years in Kentucky bourbon casks. The time in oak gives it a tight, lively acidity wrapped in warm bourbon depth. You’ll find notes of dried fruit, gentle spice and a richness that only long ageing can create.
